The Carpenters butchered a lot of songs, but I fondly recall their version of Masquerade (George Benson?). I haven't heard it in decades, however.
Nilsson has the definitive version of Badfinger's "Without You."
This is obscure, but Greenwich Village blues and folk legend Dave van Ronk has a great live version of Joni Mitchell's "Both Sides Now," playing it with a gravity appropriate to the lyrics of the song. After hearing it, Judy Collins's version sounds like a bubblegum pop tune.
